Gnocchi Bowl.
Ingredients5 or 6 pieces Organic gluten free Gnocchi (I like Cappellos made with almond flour)
2 eggs to poach or 1/2 cup cubed tofu
1/3 cup fresh or frozen corn
1/3 cup shredded purple cabbage
1 chopped green onion /scallion
A handful of arugula
1/2 tsp miso
Directions
Boil 2 cups of water in a saucepan
Add the gnocchi, eggs to poach (or tofu)
Wait 1 minute then add the cabbage, corn and scallion
Turn off heat after 2 minutes
Add 1 packet Yummy Tummy and miso...stir
Wait 2 minutes, stir again and enjoy!
